You'll be surprised at how delicious these veggie nuggets are. 🥦 . Ingredients (for 6 servings) 3 tablespoons water 1 tablespoon flax meal 1 head broccoli, broken into florets 3 carrots, sliced 1 head cauliflower, broken into florets 1 teaspoon salt 1 teaspoon pepper 1 teaspoon onion powder 3 cloves garlic 2 cups bread crumbs, divided . Preparation 1. In a small bowl, combine the water and flax meal and stir to combine. Let sit for 10 minutes. Set aside until ready to use. 2. Preheat the oven to 400ºF (200ºC). Line a baking sheet with parchment paper. 3. In a food processor, combine the broccoli and carrots, and pulse until shredded. Add the cauliflower and pulse until shredded. 4. Add the salt, pepper, onion powder, garlic, and flax egg, and pulse until well combined. Add 1¼ cups (145 g) of the bread crumbs and mix. 5. Take about 1 tablespoon of the mixture and form it into a nugget with your hands. Repeat with remaining mixture. 6. Coat the nuggets on both sides with the remaining ¾ cup (85 g) of bread crumbs. 7. Bake for 20 minutes, flipping halfway, until golden brown. 8. Or, pan fry with a small drizzle of oil over medium-high heat until both sides are golden brown, about 10 minutes. 9. Allow to cool for 5 minutes. 10. Enjoy!

Upside Down Banana Cake . Ingredients (for 6 servings) 4 ripe bananas 3 eggs ½ cup oil ½ cup granulated sugar 1 tablespoon ground cinnamon 2 cups all-purpose flour ½ cup butter 1 cup brown sugar 2 bananas, sliced vanilla ice cream . Preparation 1. Preheat oven to 350°F (175°C). 2. In a large bowl, mash the ripe bananas. Add the eggs, oil, sugar, and cinnamon, mixing until evenly incorporated. 3. Add the flour and mix until the batter has no large pockets of flour. Set aside. 4. In a pot over medium-low heat, melt the butter, then mix in the brown sugar until dissolved. 5. Bring up the heat to medium-high, cooking until the mixture starts bubbling and the sugar has melted. 6. Remove the caramel from heat and pour into a greased 9x9-inch (23x23 cm) baking pan. 7. Lay the banana slices evenly on top of the caramel. 8. Spread the banana bread batter on top. 9. Bake 40-50 minutes. 10. Cool until the bottom is barely warm and use a knife to loosen the edges from the pan. 11. Place a plate upside-down on top of the pan, then invert the pan, flipping the banana bread onto the plate. 12. Slice, then serve with vanilla ice cream. 13. Enjoy!

Ingredients (for 5 servings) 5 chicken thighs 1 teaspoon salt 1 teaspoon pepper 1 teaspoon paprika 1 teaspoon dried parsley 1 tablespoon olive oil 1 tablespoon garlic, minced ½ cup red onion, diced 1 cup long grain rice 1 ½ cups chicken broth salt, to taste pepper, to taste . Preparation 1. Preheat oven to 400˚F (200˚C). 2. In a large bowl, evenly season chicken thighs with salt, pepper, paprika, and parsley. 3. On high, heat olive oil in a oven-proof pot and place chicken thighs, skin-side down, in the hot oil. Cook 5-6 minutes or the thighs develop brown crispy skin and flip over. 4. Cook an additional 5-6 minutes to brown the other side and remove from the pot. 5. Add the garlic and onions to the pot, and cook until the onions are transparent. 6. Pour in the rice and chicken broth to the pot and season with salt and pepper. Stir well, bringing to a boil. 7. Add the chicken thighs back into the pot, skin-side up, on top of the rice, bring back to a boil and cover with a lid. 8. Bake for 35-40 minutes, or until the rice is fully cooked. NOTE: For a crispy skin, remove chicken thighs and broil. 9. Enjoy!

Ingredients (for 12 servings) 1 large loaf bread 4 tablespoons butter 3 tablespoons sugar ½ teaspoon cinnamon 10 oz dark chocolate 10 oz milk chocolate 10 oz white chocolate 3 ¼ cups heavy cream, divided . Preparation 1. Preheat oven to 350˚F (180˚C). 2. On a large cutting board cut out 3 evenly spaced squares roughly half the width and ⅙ the length of the bread loaf. 3. Take the 3 bread cut outs and slice them into 6 strips each. 4. On a parchment paper-lined baking sheet place bread and cut out bread strips. 5. Combine butter and sugar and brush onto loaf. 6. Add cinnamon to the sugar butter mixture and brush onto strips. 7. Bake for 25 minutes removing the cinnamon toast strips after 10 minutes. 8. In a small saucepan combine dark chocolate and 1 ¼ cup (295 ml) heavy cream and stir until fully incorporated. 9. In a small saucepan combine milk chocolate and 1 cup heavy (235 ml) cream and stir until fully incorporated. 10. In a small saucepan combine white chocolate and remaining heavy cream and stir until fully incorporated. 11. Place loaf on serving tray and fill each hole with one of the three fondues. 12. Enjoy!
