@ecriturehk is becoming one of my favorite restaurants in Hong Kong. In Ecriture I find a restaurant whose philosophy in fine dining very much matches what I believe dining should be. The cuisine of Ecriture maintains what causes me to fall in love with French cuisine in the first place: well made sauces, impeccable sourcing, tableside presentation, and the grand tradition of a hot kitchen.The quality of cooking is flawless with every little detail in tune with my personal preference in a restaurant. The informal but professional FOH, flavour forward cusine without the bells and whistles that accompany, and shear priority this restaurant places on ensuring its customers leave happy. It feels not like visiting a restaurant but into a close friend's home, in this case, the friend is the most generous/dangerous chef in HK, @mximeagilbert (June 2019)
