Tasty Tuesday... .
I seriously hate veggies, I have to make myself eat them...like literally force myself but this salad is BOMB 💣
My go-to kale recipe. I know kale can be intimidating but once you use this technique, you’ll be saying “oh kale yeah!!” .
1 10oz. Bag of pre washed and cut kale,
1 large ripe avocado,
Juice of 1-2 lemons (I like it very lemony),
Sprinkle of good sea salt (I like pink Himalayan).
Start by massaging the avocado into the kale and watch it soften the kale. Then add the lemon and salt and the salad is officially “dressed”. Next, you can add whatever you want. I love adding chopped apricot, nuts, tomatoes, onion, and even more diced avocado. It’s delicious, people love it, and it holds up well. .
Kale is pretty sturdy so you can make 2-4 hours prior to serving and stays great. Just cover it and keep it in the fridge. .
