Idk about you guys but as a college student I’m usually 1. too tired to cook a crazy authentic speacial meal by dinner time & 2. I’m budgeting so I don’t always have a bunch of special ingredients. That’s when easy dinners like these ➡️➡️ come in handy. I always TRY making it a priority to have some carbs, some protein (most likely lean protein), some healthy fats, & veggies in all of my meals. ✅
1️⃣ MEAL 1 IDEA: fish tacos. Trader Joe’s, Walmart, Costco etc sell already battered fish or you can sub grilled fish or even marinated tofu if you’re vegan & top with homemade pico and eat with warm corn tortillas! Add avocado & boom. You have some healthy fats, protein, veggies & carbs!
2️⃣ MEAL 2 IDEA: A salad with ANY toppings of your choice. You can sub vegan chicken if your vegan, add cheese, use any dressing you prefer. Easy to build & veggies are super cheap!
3️⃣ MEAL 3 IDEA: A protein with a carb & veggies. Can be chicken, beef, tempeh, tofu, etc with potatoes or rice or tortillas or bread & add some veggies!
4️⃣ MEAL 4 IDEA: chicken, corn, & zucchini stew ¿ lol it’s one of my moms recipes 😂 w. Rice and salsa + some avocado would add some healthy fats. Chicken is cheap, rice is cheap, & so are the veggies. You can also meal prep most of this.
5️⃣ MEAL 5 IDEA: pasta, takes 10 min to cook max. Add marinara sauce & seasoning & make a side salad for micronutrients. Super simple.
6️⃣ MEAL 6 IDEA: Turkey/roast beef/ low sodium ham/ vegan ham sandwhich w. Any fillings & @quaker chips for some fun. Another 5 minute meal.
7️⃣ MEAL 7 IDEA: Lean ground beef w. Taco seasoning (can be meal prepped) potato’s (can also be meal prepped) & mini flour tortillas w. Avocado.
8️⃣ MEAL 8 IDEA: EGGS!!! Eggs with veggies or ham or turkey bacon etc is a great quick and cheap dinner. Eggs are cheap, super nutrient dense & quick!! Here I have it with veggies, small flour tortillas & sugar free ketchup.
