Chocolate + Peanut Butter + Cake
I took my #KentuckyButterCake from a few posts back, and tweaked it for this amazing, decadent cake that you would never guess is #Keto.
1 stick of butter, melted
1/2 cup full fat sour cream
1 1/2 tsp vanilla
2/3 cup #Swerve
1/3 cup Swerve Brown Sugar
Then stir in:
2 cups fine almond flour mixed with 2/3 cup cocoa powder, 1 1/4 tsp baking powder, and 1/2 tsp pink salt
1/2 cup peanut butter with 1 1/2 Tbsp granulated Swerve.
Microwaved for 30 seconds and stir well.
Mix cake ingredients until very well combined.
Spread 3/4 cup of the cake batter evenly in a well oiled bundt/ fluted cake pan. (Make sure it fits evenly in your pressure cooker, and can be removed easily as well... I used the brand new one made for pressure cookers from #PamperedChef. It even comes with it's own rack for easily lowering and removing the pan from your cooker.)
Pour in the peanut butter filling and spread evenly, then add the rest of the cake batter on top.
Pour a cup and a half of water into the bottom of your pressure cooker, then put a trivet or rack in the bottom of the pot (you can make one with rolled up foil, just make sure the cake pan sits evenly on it.)
Cook on low pressure, manually adjusted to 23 min. Then quick release and remove from the pot. Let cool in the pan completely before inverting on to a plate.
