Continuing the toast theme from yesterday’s post, I thought I’d share one of my go to quick lunches - eggs on toast with stir fried veggies. This is one of my favourite budget friendly meals that hits the spot every time. As my housemates from undergrad will confirm, I used to eat eggs A LOT 🍳🍳. I’ve managed to include a bit more variety to my meals now, but I still love the classic eggs on toast combination. Eggs are such a good source of budget friendly protein. I try to always buy free range eggs, and often organic when I can. Even so, they’re still pretty reasonable per serving. My favourite current favourite is runny poached eggs, but I love to cook in all sorts of ways.
Deets 🍴: sourdough toast spread with marmite and a drizzle of olive oil, topped with sautéed veggies (this time it was courgette, mushrooms and spinach cooked in olive oil, balsamic, mixed herbs, salt + pepper) and two runny poached eggs.
Pretty EGG-cellent if you ask me 😜
